Strawberry Peach Foldover Quesadilla

I love using tortillas in the air fryer! Who am I kidding? I love to use tortillas in all sorts of ways. I believe that you can pretty much put any food into a tortilla. We certainly do at my house! I remember spending hours on end in the kitchen with my Nana. We would usually make desserts together. I am sure that this is why desserts are my favorite to make! This week, however, we are focusing on brunch. This ultimately means that I get to make a dessert-style brunch!
I will say, whatever topping you decide to go with, make sure to top quickly! You will not want to miss the opportunity to taste your delicious brunch treat! The inside delivers gooey goodness from the creamed cheese that is unbelievable. If you stuff them as full as I did, your cream cheese will start to come out of the sizes. It may not be as photogenic, but the taste is totally worth it! This is my go-to recipe for a quick and delicious breakfast or a simple and filling dessert.
Notes to consider
You can use any fruit you prefer. If strawberries and/or peaches are not your favorites, I recommend .using blueberries, mangos, or bananas.
If you prefer a larger wrap, look for the 10 in tortillas.
You can use corn tortillas as well.
Depending on the size of your air fryer, you may have to air fry 1-2 of them at a time. Make sure not to overlap them.

This recipe is inspired by the Tortilla Trend and the decadent strawberry-peach poundcake made by my Nana. It is delicious! She adds a strawberry cream cheese glaze on top, yummy! So, I decided to make something with a similar flavor, without the hard work or long process. It's certainly not Nana's poundcake! But, it satisfies my craving in the meantime and produces its own sense of deliciousness. I know you are probably thinking, "she said this would be easy", "how do I even fold a foldable tortilla"? No worries, I have you covered!
